Lightly syrupy and floral, with elderflower, pear, honeysuckle, and grapefruit, balanced by assertive citric acidity and a touch of lemon zest, finishing long with elderflower and gooseberry.
St-Germain was launched in 2007 by Robert J. Cooper, a third generation distiller who is credited with creating the world's first commercial elderflower liqueur after falling for an elderflower cocktail in a London bar. Each bottle holds up to 1,000 handpicked blossoms gathered over just three to four weeks each spring in the foothills of the French Alps, often carried by bicycle to protect the delicate petals, then macerated in grape spirit within 48 hours. Its pale gold color comes from the flowers' own pollen. Bacardi acquired the brand in 2013, and bartenders have affectionately called it "bartender's ketchup."
