The palate is buttery with overripe banana, fresh mint, salt, and vegetal flavors, with oak arriving on the long, spicy, vanilla finish with cracked black pepper. Bottled at 40% ABV. Siete Leguas is one of Mexico's most revered traditional distilleries, producing tequila in Atotonilco El Alto and Jalostotitlan using a blend of two facilities — one with a mule-powered tahona wheel and fermentation with agave fibers, the other with a modern roller mill. Both use traditional brick ovens. The anejo is aged 24 months in ex-bourbon barrels, refilled up to 20 times, which contributes a subtle oak influence rather than heavy barrel dominance.
