Ripe fruits, vanilla, and a lactic butter note on the nose, with light minerality and hints of bread crust, honey, and sweet hazelnut seeds. The palate is sweet and intense with mineral sapidity, good roundness, and a silky, prolonged finish with sweet cinnamon notes. San Matias Tahona Reposado uses the centuries-old volcanic stone tahona wheel for agave extraction — a labor-intensive, artisanal method that fewer than a handful of distilleries still employ. Casa San Matias has been operating in the Jalisco Highlands for over 130 years. Highland agave is harvested by hand and cooked in brick ovens before being crushed with the family's original basalt tahona stone. Fermented in pine wood vats and double-distilled in copper pot stills. The reposado rests approximately 3 months in American oak.
