Paul Sutton Bourbon is a small batch, handcrafted bourbon made from the Sutton family's century old mash recipe. Distilled in a traditional 18-inch column still, it is then meticulously aged in charred oak barrels to create a rich, sweet pour. Created in batches of twelve and yielding just eighteen to twenty barrels a day. The nose offers up caramel and rye spice, followed by hot cornbread with melted butter. The palate is big, offering up crème brûlée, salted peanuts, cloves, and orange zest. Towards the back it veers into dryness and heat though, with leather, char, and tannic oak. Closing notes on a moderate length finish include fresh mint and vanilla.
