Fresh, agave-forward and slightly wild on the nose — cooked agave, citrus, green herbs, black pepper, and a distinctive mineral quality. The palate is vibrant with full agave flavor, brine, citrus, and an earthy backbone. Clean, medium-length finish. Bottled at 40% ABV. Pasote is produced at El Pandillo Distillery (NOM 1584) in Jesus Maria, Jalisco using traditional highland production. The brand is a collaboration between Felipe Camarena and master importer William Grant & Sons. Highland Blue Weber agave is cooked in brick ovens, extracted with a roller mill and tahona combination, then fermented in open air. Additive-free. NOM 1584 is shared with the G4 program.
