Floral and aromatic, with white flowers, ripe stone fruit, and a soft tropical sweetness over clean minerality. Delicate and perfumed, the hallmark of a good tobalá, at a quietly potent 50%.
Tobalá is the wild king agave (potatorum): small, slow, twelve to fifteen years to mature, and low-yielding. Aniceto García, a third-generation maestro in Miahuatlán, makes this entirely by hand, crushing the roasted agave with wooden mallets and distilling a single time. Just 100 liters were produced, bottled under Mezcaloteca's meticulously documented export label.
