A collaboration with sotolero Jacobo Jacquez at Sotol Don Celso in Janos, Chihuahua, this Chihuahuan Desert Sotol is made from wild sotol plants harvested from the Chihuahuan Desert in Mexico. After fermentation, the spirit is twice distilled to 98.7 proof. Once in Marfa, it is filtered four times through charcoal, diluted with Marfa water, and bottle at 90 proof. This spirit is herbaceous with desert aromas of sage, white pepper, menthol.
