A traditionally-made tequila with 10+ year old agaves hand harvested and roasted in a brick oven for 2-3 days. They are then crushed and fermented with native yeasts prior to distilling in a copper alembic still and bottled by hand. This blanco tequila is crystal clear in color, and carries aromas of herbs, earthy vegetables and warm spices. The palate shows bright agave, pineapple and a hint of papaya on the palate.
