The mashbill is 63% Rye, 17% Yellow Corn, 20% Malted Barley. Each batch of Restoration Rye Whiskey is blended using a series of pods. Each pod is created by grouping barrels to create a specific sensory profile. Maximum batch size is 80 barrels. The nose is bright with aromas of lemon peel, toasted oak, apricot, wild flower, honey and graham cracker. The palate shows pie crust, honeysuckle, mint, agave nectar, cinnamon and stone fruit. The finish is cooling with spearmint and is slightly numbing.
