Cooked agave, light vanilla, pepper, and oak are present through a silky, prolonged finish with sweet cinnamon. Cascahuin is a fourth-generation family distillery in El Arenal, Jalisco (NOM 1123) established in 1904, run by Master Distiller Salvador "Chava" Rosales Trejo. Agave are cooked in stone ovens and fermented using traditional methods in the volcanic valley. The reposado rests in oak barrels.
