Dried apricot, candied plum, and dark cherry meet salted chocolate, cedar, and vanilla bean, with white pepper and a thread of smoky char on a dry, earthy finish. Rich but lean, never syrupy.
Aged in two stages: four years in ex-bourbon American oak, then three in ex-red-wine French oak, which builds the dried-fruit and cocoa depth. The agave is single-field estate fruit from the Tequila Valley barrancas, fermented open-air with the fibers and distilled in 19th-century wood-fired copper pot stills in Amatitán (NOM 1477).
