Eighteen months in American white oak pulls the agave toward darker territory: dried fig, dark caramel, toasted vanilla, and cinnamon on the nose. The palate delivers candied orange peel, baking spice, and soft oak, with the cooked agave backbone that runs through the whole Alma del Jaguar line. Finish is warm and medium-long, fading to dry cocoa. Produced in the Los Altos Highlands of Jalisco, where cooler nights and red clay soils concentrate sugar in the agave over a longer growth cycle. Same distillery as the Blanco and Reposado on shelf — the Añejo is where the terroir finally gets time to settle.
