Pineapple, aloe vera, and bell pepper open on the nose alongside earthy honey, with roasted banana and cream settling over cooked agave and a mineral, riverbank depth; the palate turns oily and layered, closing on a faint smoky note. Produced at Distillerie Bethel Romelus in Pignon, in Haiti's Nord region, from local heirloom cane fermented entirely wild and run through a small pot still. It's made from syrup rather than pressed juice, boiled slowly to hold onto the cane's aromatics.
