Tierra Noble Anejo is aged 2 to 3 years in a blend of American and French white oak barrels at NOM 1558 (Premium de Jalisco) in Mazamitla, Jalisco — at 7,200 feet above sea level, one of the highest-altitude distilleries in Mexico. The elevation and cold barrel room temperatures slow maturation significantly, yielding an unusually complex and subtle spirit. The Herrera brothers' distillery also employs secondary malolactic fermentation, giving their expressions a characteristic buttery smoothness.
