With a uniquely high malic acid level, this innovative sake is a real natural with seafood like oyster, lobster, crab, and salmon. With only 1/100th of iron compared to typical wine, IMA complements umami rich shellfish and other seafood without leaving a metallic aftertaste like many wines do. Overall very refreshing and zesty with aromas of fresh fruits, slight floral notes and a touch of sea breeze salinity. On the palate, it has a fruity aroma upfront with cleansing acidity with a slight briny and mineral finish. Finishes with a hint of sweetness reminiscent of Vouvray or Gewurztraminer.
