Junmai Ginjo from Yamagata - punching above its weight. Yamagata prefecture has established itself as one of the top Ginjo and Daiginjo producing regions of Japan and backs up the claim with locally developed rice strains best suited for the terroir. Brewed using Dewanosato rice polished 55%. Sawane is fruit driven and floral with a hint of licorice. This sake is bright and fruity with aromas of ripe pears and licorice spice. In the mouth it is viscous & layered, bright, elegant & lush.
