A lush, tropical sweetness of fresh mango nectar opens the nose, followed by bright juniper adjacent citrus and a savory undercurrent of dried chili flakes, with a juicy, full bodied entry and a spicy, smoky finish.
Flamingo Riviera was created by Leslie of Matchbook Distilling after a Yucatán trip inspired by street vendor paletas of mango sprinkled with Tajín style chili and lime. Peak season mangoes were peeled by hand and added to distillates of fresh Persian and black lime resting in the distillery's demijohns, left to macerate for about a year before arbol, ancho, guajillo, and pasilla chiles were added and steeped further, then proofed with a syrup made from those same chiles rather than plain sugar.
