Spiced orchard fruit and citrus zest over a green, herbal streak, with white pepper, resinous pine, and a firm mineral backbone. Oily and full-bodied, built for slow sipping.
Amarillo here is a natural karwinskii-rhodacantha hybrid grown at altitude in Guixe, Miahuatlán, that needs ten to twelve years to mature. Maestro Leo García makes it at Palenque Guixe, a multi-generational family project in Oaxaca's Sierra Sur, pit-roasting the agave, milling by stone tahona, and distilling in a copper refrescadera still. Macheé means loyalty in Zapotec.
