Produced exclusively from Catarratto grapes grown organically and harvested by hand in the Sicilian hamlet of Bivona, Praruar sees 2-3 weeks of skin contact and is then fermented using indigenous yeasts without any temperature controls. A textbook orange wine, it shows notes of honey, dried fruit, nuts, and warm spices. Good structure and a strong mid-palate make this an excellent pairing for roasted vegetables or a creamy asparagus pasta.
