Cooked agave leads with bright citrus and white pepper, carried by a soft florality and gentle sweetness, with a thick, evolving nose and a luxurious palate that stays polished and mineral at 45.7% ABV.
Fuenteseca is the project of Enrique Fonseca, master distiller at Tequileña (NOM 1146) in the town of Tequila, and the Cosecha series, meaning "harvest," treats each year's agave like a vintage. The 2020 edition comes from a single estate planting of Pinto Blue Weber, a subtype of Agave tequilana marked by dark spotting on its leaves, grown above 6,700 feet in the red, iron rich, volcanic sandy loam of San Ignacio Cerro Gordo in Los Altos. The agave was cooked twenty four hours in a low pressure autoclave, crushed with screw and roller mills, fermented in stainless steel with deep well water and proprietary yeast, double distilled in copper alembic pot stills, and rested in stainless steel before bottling with no additives.
