Lean and precise Burgundy Pinot Noir with red cherry, dried rose, and a note of sous-bois earthiness. The structure is firm but the fruit holds — acidity is lifted, tannins are fine, and there's enough concentration to reward four to five years of cellaring.
François and Marie Pierre Mikulski tend two parcels of Pinot Noir on the Côte d'Or, the oldest planted in 1929. The vines are farmed using non-certified organic practices. After harvest, the wine ages in oak barrels for ten months, rests in tank for two months, then is bottled — a minimal-intervention approach that keeps the focus on the vineyard rather than the cellar.
