Clean and dry, with earthy herbs, white flowers, and citrus peel over a faint mineral smokiness. Lighter and crisper than most mezcal, closer to a high-desert distillate than a smoky one.
This is cocuy, Venezuela's own agave spirit, made from Agave cocui native to the arid states of Lara and Falcón and long called the tequila of Venezuela. Botanically distinct from anything used in tequila or mezcal, it is grown at the Hacienda Santa Rosalía estate and distilled in copper pot stills, part of a protected-origin category only recently reaching the US.
