Golden in color with an assertive nose of grapefruit, honey, and a savory waft of smoke and dried herbs. The palate opens with black pepper and ripe banana, moves through vanilla, butterscotch, and cinnamon, and finishes long with juniper and a lingering evergreen character that sets it apart from any conventional reposado.
Piñas are slow-roasted in brick ovens and tahona-extracted, then fermented at low temperatures for two weeks followed by a secondary malolactic fermentation — a three-day step borrowed from winemaking that accounts for much of its unusual aromatic complexity. Aged one month in white Burgundy and Bordeaux barrels, then five more months in French oak Chardonnay casks. Additive-free. 46% ABV. NOM 1605. Capilla de Guadalupe, Jalisco.
