Viscous and fruit-forward, with strawberry, pineapple, and apple over citrus, blackberry, and persimmon, framed by mineral salt, sage, and pepper. A soft, savory smoked-lamb note closes it out.
A pechuga made with borrego (lamb): during distillation a leg of lamb hangs in the still alongside wild fruit, pecans, and ginger, drawing savory depth into the spirit. Built on espadín and barril agave from around Río de Ejutla, Oaxaca, it is a limited seasonal release from Bozal's wild-agave Sacrificio line.
