Pale salmon. Wild strawberry, red currant, pink grapefruit pith, and a green herbal note. The palate is bone-dry, with sharp acidity and a stony, slate-driven line through the middle. The finish is savory and tart, with red currant and wet stone.
It is Pinot Noir with roughly 20% Cabernet Sauvignon and Merlot from Stein’s steep slate vineyards, made by a mix of direct pressing and saignée and raised entirely in stainless steel. The Cabernet and Merlot give it a phenolic spine that pure Pinot rosé lacks. Stein trained in oenology at Geisenheim, holds a PhD in biology, and farms some of the steepest, lowest-yielding slopes in the world.
