The pyrazine aggression that plagues lesser Sauvignon Blanc is absent — aromatics are restrained and precise. The palate is lean and structured, driven by bright citric acidity, with a core of lemon curd and white peach that opens gradually. Mineral finish, stony and clean, with genuine length.
Sourced from a single vineyard in Verdigny that sits across three of Sancerre's key soil types simultaneously: Terres Blanches clay-limestone for depth and length, Caillottes chalky limestone for lift and acidity, Silex flint for that stony aromatic signature on the finish. Each soil type is vinified separately in stainless steel with indigenous yeasts, then blended. No oak. No malolactic fermentation. No interventions for color, texture, or flavor. The winemaking is entirely in service of what the ground does.
