Baia Abuladze runs one of Georgia's most celebrated women-led estates in the Imereti region, working with indigenous varieties that predate most of the wine world's reference points by millennia. Tsolikouri is Imereti's dominant white grape and in Baia's hands it's a study in precision: bright, crisp acidity, green apple, pear, a whisper of texture from the qvevri, and a clean, dry finish.
