Grapes: 100% Hondarrabi Zuri — estate vines, Getaria, Txakoli DOC, Basque Country, Spain. Ameztoi is one of the founding names of Getariako Txakolina — the smallest and most coastal of the three Txakoli appellations, perched above the Bay of Biscay where the Atlantic doesn't so much influence the wines as dictate them. Hondarrabi Zuri is the indigenous white variety of the Basque coast, and in Ameztoi's hands it produces something that feels less like a wine and more like a place. Expect searingly high acidity, a slight natural spritz from the bottling process, green apple, lemon zest, fresh herbs, and a saline, oyster-shell minerality that is entirely oceanic in character. Low alcohol — typically around 11% — keeps it light and refreshing without feeling insubstantial. There is no oak, no malolactic, no intervention between the grape and the glass.
