Palomino: a white wine grape variety best known as the foundation of Sherry production in southern Spain, particularly in the Jerez region of Andalusia. On its own, Palomino produces light, dry, neutral wines. Palomino thrives in warm, dry climates, such as Jerez and Rancho Cucamonga. The latter being where some modern winemakers are experimenting with it in a more terroir-driven, oxidative, skin-contact style.
