Varied aromas of roasted hazelnut, white-fleshed fruit, sweet spice and blond tobacco notes. Kimmeridgian. Left bank. South-east exposure. Hard limestone in a fairly strong clay base. Deep, well-drained soil with a reddish-brown colour. Very warm vineyard sheltered from the wind. Fairly gentle slopes. Kimmeridgian and Portlandian subsoil combined with a semi-continental climate and a signature grape variety, Chardonnay: that is the magical combination of the Chablis terroir. No added yeasts, long fermentation using indigenous yeasts in temperature-controlled tanks. Spontaneous malolactic fermentation. Matured for 18 to 20 months only in stainless steel tanks with as little intervention as possible. Moderate cold stabilisation. Fined with bentonite if necessary. Lightly filtered once just before bottling. The family vineyards, with an average age of 50 years, are found on the most prestigious parcels in the heart of the historic Chablis terroir.
