Crunchy yellow plum and brioche flavours shine through with bright acidity and a twist of toasted hazelnut coming from the oak influence. The style is succulent with a subtle savoury texture to the finish, resembling a Burgundian Chardonnay.
Pinched between the Atlantic and the Mediterranean is the Haute Vallée de L’Aude. The traditional ‘noble’ grape varieties of Chardonnay and Pinot Noir have a natural affinity here. Both varieties benefit from the warm climate combined with high altitude, allowing for slower and longer ripening of the grapes. These ideal growing conditions gives this wine concentrated fruit yet refreshing acidity. Made from mostly hand-picked grapes, which are are fermented in stainless steel with a touch of oak adding texture and complexity.
