This Barbera d’Alba is produced from the assembly of two vineyards, one located in the village of Barbaresco and one in the village of Neive.
Born from old clones and from a particular selection, fermented and aged in steel and cement.
Sensory Notes: Intense, brilliant ruby red. Floral notes of violets and red fruits, fresh clean, straight, fragrant fruit pulp, very fine snappy tannin and remarkable persistence. Very pleasant drinking.
Pairings: An everyday wine. Pairs well with simple dishes, appetizers, first courses, white or red meats and fresh cheeses.
Winemaking: The harvest is always done by hand, with great attention. The pressing takes place mechanically, allowing a gentle press, which expels the whole stalks and does not crush the seeds. The alcoholic and malolactic fermentations take place in steel tanks. Maceration with the skins varies according to the year, generally around 10/15 days. In this first phase the wine is enriched with the fundamental elements: perfume, color, tannins. Dolcetto d’Alba always ages in steel / concrete (no wood), for a pure expression of the vine / territory.
