From organically farmed parcels in the Saumur AOP on tuffeau (Turonian limestone) soils, the 2023 “Les Parcelles” was fermented with indigenous yeasts and raised primarily in neutral vessels to emphasize site transparency; the profile shows quince, yellow apple, pear skin, and preserved lemon layered with chamomile, wet stone, and a light honeyed nuance, finishing dry with firm acidity and a fine chalky texture characteristic of Saumur limestone. The 2023 vintage provided healthy fruit and precise acidity, yielding a Chenin Blanc with structural clarity, mineral depth, and the capacity to develop additional tertiary complexity over several years in bottle.
