Distilled from fresh cane juice rather than molasses, this opens with an earthy, savory wildness — muscovado sugar, black truffle, and mushroom on the nose giving way to green olive and bright citrus on the palate, with brown butter, seaweed, and orchard fruit carrying into the finish. Faubert Casimir runs the family still in Baradères, built by his father Duncan in 1979, double-distilling in copper pot stills from Hawaiian white and red cane fermented with local spices and vegetal leaves to draw out wild yeast.
