This organic example of the 'other white Burgundy' comes from vines over a half-century old grown in a complex mix of limestone, clay and silty soils. The wine was matured in French oak and is floral, concentrated and satiny, with pear and citrus tones atop toast and herbal notes.
'Les Costières Rond de Pré' and 'Champ Pernot'. Age of the vines: 50 years old. Whole bunch pressed. Alcoholic and malolactic fermentation in barrels, sur lies without batonnage. Wines are vinified and matured in cellars in the heart of Nuits-St.-Georges, using barrels selected from two specialized artisanal coopers and wood from the forests of Alliers, Cher, Compeigne, Fontainbleau, Jupille and Oise. Total elevage: 8 months; 2/3 in oak (used) and 1/3 in tank. One racking before bottling. Fining followed by a light filtration.
