COS is one of Sicily's foundational natural wine producers, working biodynamically since the early 1990s with an unshakeable commitment to native varieties and amphorae — the Ramì sits slightly outside their amphora program, finishing in concrete, which keeps it fresher and more approachable. The skin contact gives it texture well beyond what you'd expect from the varieties alone: expect dried citrus peel, white stone fruit, almond, and a saline, almost chalky mineral finish. This is Sicilian white wine at its most intellectually honest.
