An unassuming kind of Burgundy, it offers a richness of citrus flavor without being too forceful. Fresh lemon panna cotta on the palate leads to a zippy finish of lemon zest and seashell. Organically grown, low-intervention/natural wine. Sylvaine and Alain Normand run a small, sustainability-oriented winery in the Mâcon area of Burgundy. Though they sell some of their harvest to négociants, which is common in their region, they keep the best for their own wines. This cuvée comes from vineyards in the locale where Alain and Sylvaine first began to grow grapes: the village of La Roche-Vineuse. They don’t rush its production, letting the wine ferment with indigenous yeasts and age on the fine lees in vats. Bottling only happens when they feel the wine is ready.
