The Pavelot family has been farming Savigny for generations and their village-level rouge is a textbook argument for why Savigny deserves more attention than it gets. Flanked by Pernand-Vergelesses to the north and Beaune to the south, Savigny's two valley slopes produce wines of genuine finesse at a fraction of the price of neighboring appellations. The 2021 vintage in Burgundy was cool and precise — expect bright red cherry, raspberry, violet, forest floor, and that characteristic iron-tinged minerality that defines the appellation. Medium body, vibrant acidity, fine-grained tannins. This is the Burgundy you put in front of a guest who thinks Burgundy is too expensive — and then watch them rethink everything.
