The Black Giac is 100% Mondeuse and is fermented with native yeasts, allowed a long maceration and aged in foudres. Minimal amounts of sulfur is used and the resulting wine is a lithe, almost carbonic-like red wine with delicate features and equally bright and dark flavors. Strawberries and dried cherries represent the fruit side, thyme, fennel, pine resin and oregano rep for the tertiary side, which lends itself to be a truly wonderful dinner wine. One of only a few monovarietal Mondeuse wines out there!
