The fruit was sourced from two of our organically farmed estate properties and the famed Red Willow Vineyard. Harvest for the Cabernet Sauvignon did not begin until October 11 and continued until the final pick on October 27th – perfect growing conditions for this great grape – plenty of hangtime for developed tannins and enough sun to fully ripen the fruit. We employed a 24 month cellaring in slightly more than ½ the barrels in New French Oak – as a result the wine has gorgeous fragrance, bold dark flavors with nice toasty oaky notes and a lingering silkly tannic finish. Expect this to cellar for up to 20 years – but also enjoy this vibrant wine now.
