Les Lavières is one of the premier cru vineyards of Savigny-les-Beaune, on the village's northern slope bordering Pernand-Vergelesses. Nicolas Rossignol farms in the Volnay mold — emphasis on finesse over power — and 2020, despite its warmth, produced some of the most harmonious wines of the Côte de Beaune. Pair with roast duck, grilled salmon, or braised short rib.
