A joint project between Artadi and Zapiain, a Basque Cider producer. The base wine was aged for one year on lees, with a third of it aging in barrel, it then spent 18 months undergoing traditional sparkling fermentation in bottle. Aromas of citrus and peppermint. Creamy texture on the palate with an attractive saline minerality wonderfully balanced by a sharp acidity. A complex sparkling wine full of character. Bring on the oysters!
