30% whole cluster fermentation and aging in older 3,000 liter wood leads to a wine that rivals a great Burgundy! There are initial aromas of cherries, plums, and cedar which are then perfectly complemented by forest-y, earthy goodness. The full flavors are then charmingly balanced by a medium to light mouthfeel but framed by very nice tannins and good acidity. This wine has been very deftly matured for two years in used oak barrels. Spontaneous fermentation in stainless steel then 2 years in large fuder, bottled without filtration
