100% Nebbiolo. South facing hills, 500 grames per plant yields, end of September harvest, fermentation in stainless steel. Aged 2 years in barrique/barrel, 7 years in bottle. 500 cases annual production.
Being a younger Gran Cru than some of the others in La Morra, Fossati holds an explosive edge and bursts with fruit and flowers. These wines find themselves developing distinct savory and spicy flavors/aromas quickly after aging, sometimes a year in the bottle. However, they hold decades later in statuesque manner. In Roberto Voerzio's nonintervention style, his riserva is produced almost the same as the standard barolo, yet the vintage is released 10 years after bottling to allow the unique characteristic of Fossati to appear for the drinker.
